Description : REYES DE ARAGON 2004 ORGANIC WHITE WINE GROWING AND HARVESTING NOTES: Harvest Qualification: 2004 Very good. Harvest dates: End of September. Description: An intensive and log cold weather, meant root activity started a little later than other years, so there was no special frosting problems to the buds when the weather turned hotter at the end of February. The rest of the ripening cycle ended very well. The vintage took place without problem, resulting in a harvest with a low yield per hectare, 4000 Kg /ha. due to the drought but of a great quality. The maturity of grapes was affected by a moderate weather so the final harvest was late on September being of a very good quality. WINEMAKING NOTES Grape Varieties: Chardonnay 100% Maturity in oak barrel: 5 months in French oak barrel Maturity in bottle: minimum 6 months Vinification: After a selective harvesting, the talks were removed from the grapes, and mechanically pressed, afterwards the must was fermented at 18º C. in stainless steel vats where it was macerated for 10 days. Then the wine was removed from the original vat to another, where it aged for a further 10 days with its natural lees in “batonage” process. After the a natural filtering, the malolactic fermentation was transferred into oak wood casks. Finally, the organic wine reposed there for 5 months before being bottled. ANALYTIC NOTES Alcoholic Strength: 14 % vol. Residual Sugar: 1, 1 grams / litre. Volatile Acidity: 0, 5 grams /litre. Total Acidity (in tartaric): 5, 3 grams /litre TASTING NOTES This wine is a deep yellow colour with golden touches. Extraordinary intense and complex aroma, with generous ripe white fruits, grapefruit, pineapple and nuts. There are also fennel and balsamic aromas, soft smoky and honey traces coming from the “batonage” process in its natural lees and a relative long stay in new oak barrels. In the mouth it is full-bodied and meaty, with prominent ripe tannins of great quality. The wine is in well balance, with very slight acidity that give the necessary freshness so significant for a wine with high alcoholic grading. Its finish and aftertaste is extremely long and pleasant. Serve at 12 – 14º C Advisable dishes: Will go especially well with white meats, poultry, and fatty fish. Aging potential It will evolve favourably in bottle during the next 2 years.
