We make our halloumi the traditional way and add mint to give a slight freshness to the palette. Halloumi is a versatile cheese to cook with and can be enjoyed on dry fried with chilli dip, within a salad, or baked. Try baking it with honey and chilli, tomatoes and herbs or fennel and oregano.
