Halloumi cheese is a salty brined ‘squeaky’ cheese, originally from the Mediterranean. We make our halloumi the traditional way and add mint to give a slight freshness to the palette.
Halloumi is a versatile cheese to cook with and can be enjoyed on dry fried with chilli dip, within a salad, or baked. Try baking it with honey and chilli, tomatoes and herbs or fennel and oregano.

The cheese and has a smooth, melt in the mouth texture, similar to Port Salut or Saint Paulin, with full herbaceous flavours that are similar to strong cheddars.

Sussex Velvet is a washed curd cheese. It is made in a similar way to our Seven Sisters (sheep milk) and Sister Sarah (goat milk) cheeses. However, it has a much more buttery texture due to the large size of the butter fat molecules.
The organic cow milk comes from the cows based on our farm. The sheep milk is supplied by several sheep milking units, the largest milking over 700 ewes twice every day, and our goat milk comes from Kent.
Our donkey milk is produced on a dedicated farm in the Republic of Moldova, with a carefully managed herd of 200 donkeys. We currently produce approximately 300 liters per day, ensuring consistency, traceability, and reliable supply.
Recognized for its exceptional nutritional profile and skin-friendly properties, donkey milk is highly valued in premium food, nutraceutical, and cosmetic applications. Its natural composition, close to human milk, makes it a sought-after ingredient for high-quality and specialty products.
