Description | REYES DE ARAGON ORGANIC RED WINE GROWING AND HARVESTING NOTES: Harvest Qualification: 2003 Excellent Harvest dates: Merlot: End of September, Syrah: Beginning of October. Description: Early hot weather, meant root activity started a little earlier than other years, bringing some frost problems to the buds when the weather turned cold again later. Nevertheless, the rest of the ripening cycle ended very well. The vintage took place without any problem, resulting in a harvest with a lower yield per hectare but of a great quality. The maturity of grapes was affected by the intense heat so the final harvest was of an extraordinary good quality. WINEMAKING NOTES Grape Varieties: Merlot 50 %, Syrah 50 % Maturity in oak barrel: 4 months Maturity in bottle: 6 months Vinification: After a separate varietaly harvesting, the talks were removed from the grapes, then were fermented at 25º C, leaving the grapes together with pips and skins, in stainless steel vats where they macerated for 20 days. Then the wine was removed from the original vat to another, where it aged for a further 25 days with its natural lees. After the pressing process and natural filtering, the malolactic fermentation was transferred into oak wood casks. Finally, the organic wine reposed there for 4 months before being bottled without any sort of stabilization. Due to this natural winemaking process and evolution, it is possible to find some sediment. ANALYTIC NOTES Alcoholic Strength: 14 % vol. Residual Sugar: 1, 1 grams / litre. Volatile Acidity: 0, 3 grams /litre. Total Acidity (in tartaric): 3, 3 grams /litre TASTING NOTES This wine is a deep cherry red colour with violet touches. Intense and complex aroma, with generous ripe red fruits, blackberries, redcurrants and violets. There are also balsamic aromas, soft smoky and chocolate traces coming from a brief stay in new oak barrels. The oenologists of the family did not want to cover the rich primary wine aromas by keeping it too long in barrel, therefore, after finishing the malolactic fermentation it was bottled. In the mouth it is full-bodied and meaty, with prominent ripe tannins of great quality. The wine is in perfect balance, with slight acidity that give the necessary freshness so significant for a wine with high alcoholic grading. Its finish and aftertaste is extremely long and pleasant. Serve at 16 – 18º C Advisable dishes: Will go especially well with red meats, poultry, stews and cheeses. Aging potential It will evolve favourably in bottle during the next 5 years |
